Are your ''about 6 unlinked chapters'' really chapters with markers? If they are, those are called orphan chapters. Blu-ray rules require there's a way to link to them.

Get Audacity if you don't already have it. It's free.
Drag and drop the video on to Audacity and it will extract just the audio track. If there's more than one track you will have the option to choose the track you want.
You can then export it in the format you need.

It certainly doesn't hurt to have USB 3.0. It's worth the extra cost when it's home videos you're trying to preserve.
