You have to be so close.
Are you starting with an existing title that comes with Studio, or are you using a blank one? (Probably doesn't really matter.)
After you have your text typed in, and you don't like the font, you can either "drag" of the text to select it, or you can click on the "frame" around the text, and THEN try changing the font.
I think I'll fire up Studio and see what vital step I'm missing...
ADDED...
After you've selected the "frame", you can click on one of the "styles" (the A's) in the right column. Pick a simple-looking one. Then you can click on the "Custom" tab and turn off stuff like edges and shadows, and you can change the face color.
Tip - At the bottom of the title editing screen, click on the "T" (to add text), then click in the window and start typing. So you can add multiple blocks of text to your title.
